Like all Aircraft Catering Companies, here in Café Riva we are experienced in the preparation of meals that work best on Private Aircraft. We appreciate the importance of ensuring that the flight experience is smooth and enjoyable for the client and we are aware that the food service goes a long way in making this possible. We understand that some food selections are better suited than others to being served at high altitudes. We work with all Flight Attendants in organising the perfect menu. The staff in Café Riva will ensure that every tiny detail is tailored to achieve a sophisticated in-flight experience for clients. We know that at high altitude a feeling of fullness is achieved more quickly.

Dishes that are overly rich will contribute to a feeling of lethargy. Many of our clients are business people who need to stay sharp and focused and are frequently working while travelling. More than ever we are also seeing that there is a real focus on healthy eating. Flight Attendants and Operations personnel are requesting our suggestions for healthy meals and snacks to serve on board their Private Aircraft.

Café Riva’s most requested salad this month has been Roast Butternut Squash and Quinoa Salad. We’re sharing the recipe with you because we hope it’s one that you will try at home! It works very well for serving on an Aircraft either for a delicious lunch or for a side dish. Café Riva will send it to you fully prepared in an airtight container. While it isn’t a warm salad per se this can be changed by a last minute addition of an ingredient like warm chorizo which we can send to you separately. When presented on board a Private Aircraft the colours of this dish really evoke the taste buds and stimulate the appetite!

Café Riva’s Roast Butternut Squash & Quinoa Salad

Ingredients:

  • 1 small Butternut Squash, peeled, seeded and cut into chunks.
  • 1 tablesp. Olive Oil
  • 2 tablesp. Maple Syrup
  • Salt & Pepper
  • 200g. Cooked Quinoa
  • 75g Pomegranate Seeds (or 75g Dried Cranberries)
  • 1 tablesp. Chopped Parsley
  • 2 tablesp. Apple Cider Vinegar
  • 1 tablesp. Wholegrain Mustard

Method:

  • Pre-heat oven to 200⁰C/400⁰F.
  • Mix olive oil, 1 tablesp maple syrup, curry powder, salt & pepper together in a bowl.
  • Add the prepared squash and mix until completely coated. Empty onto a baking tray, place in oven and roast for approx. 15 mins until tender.
  • Mix Apple cider vinegar, mustard, remaining maple syrup together in a bowl. Add the cooked quinoa, chopped parsley, pomegranate seeds, salt & pepper & cooked squash. Gently stir & it’s ready to serve or store in an airtight container in the fridge for up to 3 days.
