Cafe Riva Aircraft Catering requests over the past four weeks revealed a number of interesting statistics! 82% of all our orders contained requests for fresh fruit. This was supplied in Whole Fruit Baskets, Sliced Fruit Platters and in Fresh Fruit/Berry Kebabs.
An astonishing 96% of all orders contained Fruit! In addition to the Fresh Fruit ordered and supplied Fruit was also supplied in many other ways/forms e.g. Freshly Squeezed Fruit Juices, Smoothies, Dried Fruit (served on all our Cheese Boards), Dried Fruit in Freshly Baked Scones and Cookies; Fruit Sauces e.g. Apple Sauce, Cranberry Sauce; Fruit Coulis; Fruit and Berry Crumbles, Pies and Tarts.
Should we include the sliced lemons, limes and oranges ordered for the purpose of garnishing cocktails or other beverages then we can say that in 99% of our orders received there was a request for Fruit!
While the content of Crew Meals is on the whole at the discretion of our chefs here Cafe Riva provide fresh fruit in all meals unless advised otherwise. This ranges from whole fruit, fruit kebabs, fresh fruit salad or sliced fruit.
There are practical benefits for serving Fruit as part of the Food Service on an aircraft. Fruit is very versatile, is easy to eat and is very appealing when presented on platters. It can be supplied ready to serve on our very high quality disposable plates and platters. Alternatively, it can be supplied in bulk, allowing the Flight Attendant to present it on the crockery on board. Fruit is a good meal choice when catering for Vegetarians, Vegans and Coeliacs. It can be included in many diets including Low Fat/Low Cholesterol diets (most fruits). Of course there are numerous benefits for Fruit in the diet. Fruit is a good source of Vitamins and Minerals. It is high in Fibre and low in Calories.
Fruit can be served as a snack or it can form part of any meal served on board an aircraft. Fruit juices, sliced fruit and granola parfaits are very popular requests for breakfasts. Fresh Fruit Salads are frequently served as part of a lunch offering. Many desserts contain Fruit – Homemade Tart, Crumble, Strudel..
As apples are in season our chef’s choice for dessert here at Cafe Riva Aircraft Catering is Traditional Apple Crumble served with Sauce Anglaise. We will share the recipe with you which can be supplied in individual ceramic bowls, ready to reheat and serve or supplied in a tray to be portioned and served by the Flight Attendant.
Apple Crumble
Ingredients:
- 125g Plain Flour
- 125g Porridge Oats
- 100g Soft Brown Sugar
- 125g Butter
- 1 tsp Lemon zest
- 800g Cooking Apples, peeled, cored and quartered
- 100g Caster Sugar
- 4 tablesp fresh Lemon Juice
- 2 tablesp Water
- 1 tsp Cinnamon
Method:
Preheat the oven to 190⁰C, 375⁰F, Gas 5
Put the prepared apple, water, lemon juice caster sugar and cinnamon in a saucepan over a low heat and simmer for 6-10 mins, stirring occasionally. Pour into a large greased baking dish.
Sieve the flour into a large bowl. Add the porridge oats and mix with a wooden spoon. Chop the butter into the bowl and rub in with the fingertips. Add the brown sugar and lemon zest and mix well together.
Spoon the Crumble over the Fruit in the baking dish. Bake in the oven for 25 mins approximately.
